My Inimitable Ragù Meat

My Inimitable Ragù 
Whether it's gnocchi, lasagne, polenta or bruschetta... meat sauce is always the star.

Ingredients for 6 people                                 
  • Minced beef 250g
  • Minced pork 150g
  • Celery 1 stalk
  • 2 carrots
  • White onion 1
  • Dry white wine 50ml
  • Garlic 1 clove
  • Butter a knob
  • Tomato pulp 250g
  • Tomato concentrate 2 tbsp
  • Salt and pepper to taste
Procedure for the meat sauce

Wash the vegetables and chop them finely (celery, carrots, onion) creating a chopped vegetables for the sauté, put it in a pot with a knob of butter over low heat and let it take heat for a few minutes, now add the chopped beef 250g and pork 150g raise the heat slightly and sauté the meat evenly.

Add 50ml of dry white wine and let it evaporate and lose the alcoholic part, at this point I add the crushed poached garlic clove and the 250g tomato pulp and 2 tablespoons of tomato paste, a cup of water, salt and pepper and lower the flame to the minimum and let it simmer for 2 hours.
