Blueberry and Lemon Cookies

Here's my recipe for American cookies, discovered by chance during my stay in the States.

Ingredients:

  • Flour type00 310g
  • Bicarbonate one and a half teaspoons
  • Butter 170g
  • Sugar 150g
  • Brown sugar 50g
  • Eggs 1 large 
  • Lemon zeste 10g
  • Lemon juice 30mL
  • Milk 40mL
  • Fresh blueberries 300g
  • Vanilla extract 1 teaspoon 
  • Salt 1 pinch 

For the icing:

  • Icing sugar 180g
  • Lemon juice 30mL

Procedure:


We mix, in a bowl, 310g of flour, a teaspoon and a half of baking soda and a pinch of salt. Whip, vigorously, in a second bowl, 170g of butter softened with 150g of white sugar and 50g of cane for at least a couple of minutes. Add the juice and the zest of a lemon, a teaspoon of vanilla extract and continue mixing. Then add 40mL of milk and an egg and incorporate the flour until a homogeneous and compact dough is obtained. Finally we add the blueberries. Wrap it in the film and let it cured in the fridge for about 30 minutes.

We resume the dough and on a clean surface we round it so as to have a "biscuity" cylinder. Cut into precise slices of about 1cm with a sharp knife, place the biscuits in a baking pan covered with baking paper well spaced apart.

We bake in a hot oven and bake 15 minutes at 180°C in static mode.

In the meantime we prepare the icing. Put the icing sugar and lemon juice in a bowl and whisk vigorously until you obtain a white mixture with a dense and homogeneous consistency.

We take it out of the oven, let it cool and decorate it with the icing.
