Chocolate Sauce and Jack Daniels

Here is a really delicious recipe to accompany your meat dishes

In this dish I have prepared grilled pork fillets with the sauce described below.

Ingredients for 4 people:
  • Dark chocolate 200g
  • Jack Daniels 50ml (Whiskey)
  • Butter 50g
  • White onion 1/2
  • Garlic 1 clove
  • Carrot 1
  • Vegetable broth 70ml
  • Oil evo 15ml
  • Sage and Rosemary some leaves
  • Salt and pepper qb

Procedure:

Let's start by washing and making in mirepoix (cubes) the half white onion and the carrot, put it in a saucepan and with 15ml of evo oil let them brown, add some sage leaves, rosemary and a clove of poached garlic (not peeled).
Let it aromatize for a few minutes and blend with Jack daniels, the alcohol should evaporate completely.
Remove the clove of garlic, sage and rosemary and add 70ml of vegetable broth and 200g of dark chocolate over 50% cocoa, lower the heat to a minimum and let it simmer for 10-15 minutes until it has a medium density, checking that it does not stick to the pot.
At this point, if the sauce has the desired density, remove it from the heat, add 50g of butter and with a minipimmer pass everything so as to mix the ingredients better. 

Tips:

  • You can also use 60% or 70% cocoa chocolate if you want a darker sauce with a more bitter taste.
  • You can avoid using butter if you are living a healthy life, but it will be less velvety on the palate.
