Japanese Pancakes

Here is the famous Japanese recipe for making pancakes that I discovered in Japan, fluffy and tall are the characteristics that distinguish them from classic pancakes.

Ingredients for 3 pancakes.
  • White eggs 4
  • Icing sugar 50g
  • White flour 00 40g
  • Baking powder one third of a sachet 6g
  • Butter 20g(for baking)
  • For garnish
  • Mixed fruit 
  • Icing sugar
  • Various toppings (chocolate caramel honey berries etc.)
Procedure:

We start by separating the whites from the reds of the eggs, we collect the whites in a perfectly clean steel bowl, we are going to whip the egg whites until stiff adding the icing sugar 50g a little at a time better if you have the planetary mixer with the whisk or with the classic whisk and a lot of luck...😅

Now beat the egg yolks with the sugar until frothy, add the white 00 flour 40g and baking powder 6g and mix with a spatula without disassembling the mixture.

We now combine the two masses, the whipped egg whites in the bowl of yolks with a spatula from the bottom up without disassembling the mixture.

Cooking:

We heat a non-stick pan with a knob of butter, when it is hot we place two ladles one on top of the other for each pancake we want to make, cover the pan with the lid for a few minutes and then turn the pancakes over, they should be lightly browned on both sides.

Check the flame, it must not be too high!
 
Now you can plate them and decorate them, stuff them however you like...

American Pancakes










Ingredients for 4 pancakes
  • Eggs 2
  • Butter 50g or 30ml oil
  • Icing sugar 50g
  • White flour 00 200g
  • Milk 180ml
  • Baking powder one third of a sachet 8g
  • Butter 20g(for baking)
For garnish:
  • Banana 2
  • Icing sugar
  • Chocolate chips to taste
  • Various toppings (chocolate caramel etc.)
  • Chocolate vanilla ice cream etc.
Procedure:

Put the ingredients in a bowl or blender, mix everything to obtain a fluid but dense mass.

Cooking:

We heat a non-stick frying pan with a knob of butter. When it is hot, we ladle two pancakes for a few minutes and then turn the pancakes over, they should be lightly browned on both sides.

In the same pan we caramelise the banana with a little caster sugar.
 
Now you can plate them and decorate them with the caramelised banana, ice cream, topping and chocolate chips.

European-style Savoury Pancakes





Ingredients for 4 pancakes
  • Eggs 2
  • Butter 50g or 30ml oil
  • White flour 00 200g / or wholemeal
  • Milk 180ml
  • Baking powder one third of a sachet 8g
  • Butter 20g (for baking)
  • Salt 2g
  • Optional you can add whatever you like to the dough as long as it is chopped / minced etc..
  • Parmesan cheese 50g
  • Grated courgettes
  • Diced bacon
  • Spinach
  • Tuna
Procedure:

Put the ingredients in a bowl or blender, mix everything to obtain a fluid but dense mass.

Cooking:

We heat a non-stick frying pan with a knob of butter, when it is hot, we ladle two ladles for a few minutes and then turn the pancakes over, they should be lightly browned on both sides.

Now you can also stuff them as sandwiches
