Tomato Sicilian Sauce and Guacamole

Here is a recipe for a tomato, caper and parmesan sauce that goes well with many dishes.

Try it with pasta!

Ingredients for tomato pesto:
  • Tomatoes 400g
  • Parmesan cheese 90g
  • Olive oil 90ml
  • Garlic 1/2 clove
  • Basil a sprig
  • Salt and pepper to taste
  • Capers to taste 
  • Black olives to taste
  • Anchovies 1/2
Procedure:

We wash the basil and tomatoes carefully cut them into pieces and remove as many seeds as possible, peel half a clove of garlic and put it in the blender together with the tomatoes to 90g of parmesan cheese and 90ml of evo olive oil the basil leaves and a few capers, anchovies, and black olives according to your taste.

Mix everything until smooth and fluid, add salt and pepper to taste and voila.

Ingredients:
  • Avocado 2                   
  • Lime juice 1                
  • Jalapeรฑo pepper 1/2  
  • Onion 1/2                   
  • Coriander small bunch
  • Ripe tomato 1
  • Garlic 1 (optional)
  • Salt and pepper to taste
  • Paprika powder to taste

Procedure:

We cut two avocados in half and stone them, finely chop the chilli, onion, garlic, tomato and coriander and combine everything in a bowl and mash it all up with a fork, add the lime juice, season with salt and leave to rest before serving.

It would be great to have a mortar and crush everything but you can blend everything even if it's not desirable, Mexicans will never know anyway!๐Ÿ˜‚๐Ÿ˜‚
