Oriental Fettuccine

Here's my recipe for a tasty first oriental style, to get out of the routine with homemade fettuccine.

Ingredients x 4 people:
  • Fettuccine 350g
  • Prawns 200g
  • Courgettes 1
  • Fresh ginger (to taste)
  • Curry 1 teaspoon 
  • Garlic wedge 1
  • Soy sauce 3 tablespoons 
  • Spring onion 1
  • Carrot 1 
  • Sesame oil 10g
  • Salt and pepper  
Procedure:

We clean the prawns and remove the intestines, starting with the tail, helping with a skewer. We cut the clean prawns into pieces with a sharp knife. 
Wash the vegetables and, with a mandolin, cut 1 julienne courgette and finely slice the ginger, 1 spring onion and 1 carrot.
Boil a saucepan of salted water and in the meantime put 1 tablespoon of sesame oil and a clove of garlic in a large pan and let it flavour for a few minutes. Remove the garlic, add the zucchini, ginger, spring onion and carrot and cook for a few minutes. Finally, add 1 teaspoon of curry and 3 tablespoons of soy sauce.
When the water boils, we throw the pasta, I used some fresh, homemade fettuccine that will have a cooking time of about 5 minutes.
In the meantime we add the prawns in the pan with the sauce and sauté over medium heat. We drain the pasta and finish cooking in the pan with some cooking water if necessary. Add salt and pepper to taste and serve.

Tips: 

  •  We can add a handful of sesame seeds to the plate to give color and crunchiness.
  • Garnish the dish with fresh coriander or parsley.
