Lamb chops

Today I tell you about my recipe for making lamb chops or as they call them in Lazio "Abbacchio a scottadito". Tender and tasty are a second tasty and irresistible.

Ingredients for 2 people:

For the ribs:

  • Lamb chops 10
  • Oil evo qb
  • Rosemary 1 sprig
  • Garlic 1 clove
  • Salt and pepper qb
  • Lemon 1

For the contour:

  • Carrots 1
  • Courgettes 1
  • Onion 1
  • Apple 1
  • Tomatoes 6
  • Brown sugar 2 spoons
  • Curry powder 1 teaspoon
  • Oil evo qb
  • Salt and pepper qb

Procedure:

We clean the ribs from any bone fragments and superfluous grease and wrap a strip of aluminum on the end of the bone.

In an ovenproof dish, we prepare a pinzimonio of evo oil, chopped rosemary and garlic and let it macerate for 30 minutes. We put the ribs in the baking pan and let them season covered with transparent film for at least 1 hour.

In the meantime, prepare a side dish in the oven to accompany the ribs. We wash 1 carrot, 1 zucchini, 1 apple, 1 onion and 6 cherry tomatoes. Cut the carrot and courgette in half along the whole length, the apple in slices and the onion and cherry tomatoes in half.

Arrange the vegetables neatly on a baking tray covered with greaseproof paper and, with a kitchen brush, sprinkle with evo oil and sprinkle with salt, pepper, brown sugar and curry powder.

We bake the vegetables for 25 minutes at 180°C in ventilated mode.

We put a cast iron plate or soapstone on the fire and let it warm up well, at this point we are ready to cook the ribs.

We cook, after removing the excess oil, for about 3-5 minutes per side to have an even cooking.Once the cooking is finished, we will put together the baked vegetables and a slice of lemon and serve them hot.
