Salmon Star Special ⭐️

Crispy Grilled Salmon:

  • Ingredients for 2 people:
  • Salmon 4 slices of 150/180g
  • Cherry tomatoes 10
  • Red potatoes 2
  • Onions 2
  • Champignon mushrooms 10
  • Carrots 2
  • Paprika and curry to taste
  • Parsley or coriander to taste
  • Salt pepper to taste
Procedure:

Clean and peel the vegetables, cut them in half and place them on a baking tray, brush them with olive oil, salt, pepper, paprika curry powder and a pinch of raw sugar and bake them in the oven 20 minutes at 170° (you can use whatever vegetables you like)

Heat up the griddle, non-stick frying pan or grill pan, lightly oil it and place the salmon slices on it, I recommend covering them for a couple of minutes with a lid to allow the heat to reach the inside of the fish.

Turn them on the second side when the first is well browned, they will be ready in about 8 minutes, serve with the vegetables and season with a drizzle of raw evo oil, parsley or coriander would go very well together.

Super Salmon Bowl:

Ingredients for 2 persons:
  • Rice 200g
  • Salmon 260/300g
  • Avocado 2 
  • Sesame seeds to taste
  • Soy sauce\ teriyaki sauce
  • Sugar one teaspoon
  • White vinegar 10cl
Procedure:

This is a simple recipe for those who want something tasty but at the same time watching their figure, as it is low in fat. 

We start by boiling the rice with a little sugar about a teaspoonful in water and a tablespoon of white vinegar if you like, as is usual for sushi.

We prepare the salmon, which must be blast chilled 24 hours at -18° in the blast chiller, I recommend getting it ready to use or lightly smoked.

Dice the salmon and let it marinate in a bowl with a little soy sauce or teriyaki sauce according to your taste.

Cut an avocado in half, stone it and carve it with a knife while it is still in the shell vertically and horizontally with a spoon extract the pulp and it will already be cubed.

Composition:

Now that everything is ready, we can create the dish.
We line a bowl with cling film, this process will help us to turn it over in the dish, now in sequence we place the salmon, avocado and rice inside the bowl.

We compact by applying a little pressure and then invert onto a plate, garnish to taste with sesame seeds and season with oil, soy, mustard, etc.

Salmon in a bread crust

Ingredients for 4 persons:
  • Salmon 4 slices of 120/150g
  • Grated dry bread 100g
  • 15ml evo oil 
  • Parsley 1 tuft
  • Garlic 1/2 clove
  • Salt and pepper to taste
Procedure:

We portion the slices from a 120/150 g salmon fillet as you wish, we can leave or remove the skin, if removed the salmon will be lighter as the fats in the skin will not melt together.

It is very important to check that there are no bones left in the slices, you can spot them by running your hand over the flesh, we can remove them with tweezers if there are any.

In a bowl, season 100g of breadcrumbs with 15ml of evo oil, chopped parsley and garlic, salt and pepper to taste.

We stir well and sprinkle and compact our salmon slices, trying to make them stick together as much as possible.

We can choose two ways to cook them, the first is in a non-stick frying pan with a drizzle of olive oil, but we must be careful to turn the slices gently because the bread tends to burn easily.

The second is in the oven on a baking tray at 180/200° for about 20/25   

Exotic Salmon Salad 

Ingredients for 2 persons:
  • Salmon 240g
  • Iceberg 80g
  • Songino 70g
  • Cherry tomatoes 12
  • Asparagus 10
  • Sliced cucumbers 8 
  • Sliced hearts of palm 8
  • Sliced carrots 8
  • Lime1
  • Sesame seeds to taste
  • Sliced mangoes 1 
  • Sliced avocado 1
Procedure:

Wash all the vegetables and fruits , in two bowls or plates, starting in the centre with iceberg lettuce create your salad, songino, sliced carrots, asparagus, hearts of palm, sliced mango, sliced avocado, cucumber, cherry tomatoes and then finish with salmon in strips or slices, lime wedges and sesame seeds and a dressing to your liking.

The Sesame Sauce is a fantastic combination!
