Potato flan

Today I thought of preparing a potato flan. It is a very simple recipe, crispy on the outside, soft and stringy on the inside!
Making a potato flan is really easy and we can combine many ingredients, using all vegetables we will have a vegetarian flan or adding meat such as sausage we will have a strong and unmistakable taste.
Today I will make it with potatoes, cheese and vegetables!

Ingredients:
  • Potatoes 800gr
  • Eggs 2 medium
  • Milk 100 ml
  • Butter 40 gr 
  • Grated cheese 100 g 
  • Mozzarella 120 gr
  • Salt, pepper and nutmeg to taste
  • Breadcrumbs to taste
  • Carrots 2 
  • White onions 2 
  • Peas 100 g

Procedure:

Start by peeling the potatoes and boiling them until the fork will pierce them easily, in the meantime hull the carrots and onions and cut them into small pieces and sauté them in a pan with the peas and a drizzle of olive oil until the vegetables are golden brown, correct with salt and pepper.

Beat the eggs in a bowl, add the melted butter, the vegetables, the cheese and the other ingredients, mash the potatoes with a potato masher and mix them together with a whisk. When the mixture is smooth and homogeneous, transfer it to an oven dish and sprinkle with breadcrumbs and grated cheese.

Cooking:

 Bake 25/30 minutes at 180 degrees.

At the end of cooking remove from the oven, leave to cool and enjoy!
